Vegan Coconut Curry

It’s about time for a new recipe! Fancy tucking into a warm bowl of tasty curry?! It’s got all sorts, sweet potato, broccoli, chickpeas, quinoa and plenty more! I have decided for lent that I will go Vegan and I am so excited that I have been testing out some different recipes. This one is so flavoursome and I would recommend it to anyone vegan or not its a cracker.


1 sweet potato, peeled and cubed.

1 large broccoli, cut into florets

1 onion, diced

1 can of chickpeas, drained and rinsed

1 can of chopped tomatoes

2 cans of light coconut milk

50g quinoa

1 tbsp ginger

1 tbsp tumeric

3 tsp soy sauce

Fresh coriander

On the side: (Optional)

250g green beans


  1. Place all the ingredients apart from the broccoli and green beans into a large pot. Add 1/2 cup of water. Stir all the ingredients.
  2. Place on medium/high heat for 30 mins, stirring occasionally. Add the broccoli cook for a further 30 mins until the sweet potato is cooked through and the curry has thickened. (It may need 10-30 mins more depending on how large the sweet potato cubes are).
  3. Cook the green beans in a large pot of water for 5-6 mins.
  4. Sprinkle over fresh coriander and serve!
